From beginning to end, Carly and Levi created an elegant and deeply personal celebration of their love. A creative dynamic duo, Carly is a wedding photographer (Carly Tia Photography) and Levi an illustrator and author of children’s books, their vision for their day unfolded with a minimum of fuss and an excellent result. Starting with a beautiful free range ceremony beneath the Springbrook National Park forest canopy, then drinks and nibbles at their Springbrook home followed by a lively family style feast for 25 treasured family and friends.  The whole event was DIY with zen like planning, a focus on keeping things simple and the importance of ‘having a nice time’ - special details added layers to the day- a hand drawn invitation by Levi, feasting tables made by Levi’s Mum and Dad from recycled decking, a fun day of sisterly bonding over flower arrangements and of course good food and wine. Even Carly’s dress didn’t make itself known to her until she spied it in Zimmerman the week before the wedding. Sometimes it really is just the simple things in life that make our hearts sing.

 

 

TO BEGIN with drinks…

·       Antipasto Grazing Table of cured meats, mountain cheese, baked thyme and garlic ricotta, marinated feta, pickled baby vegetables, baby asparagus, spiced warmed olives, dips

·       Crusty Ficelle, toasts, crackers and lavosh

 

FEASTING

 

·       Hot breads served with butter

·       Baked risotto; lemon and fennel, Grana Parmagiano, herb crust, frizzled basil

·       Wild rocket salad with radicchio, witlof and fresh fennel, lemon dressing

 

·       Barramundi fillets, black sesame crust, black bean glaze, seaweed salad

·       Steamed seasonal greens, al dente with an extra virgin splash

 

·       Pancetta wrapped chicken, pecan lemon thyme and bacon stuffing, sage burnt butter, caramelised lemons

·       Warm Mediterranean vegetables, zucchini, potato, sweet potato, capsicum, butternut, confit garlic, balsamic reduction, rosemary

 

DESSERT

·       Chocolate layer cake with whipped chocolate ganache, berries and cream

·       Mini lemon meringue tarts

 

LATE NIGHT SUPPER

·       Vegetarian help yourself supper table with rosemary & garlic roasted mushrooms, onion jam, greenoak lettuce, maple walnut crumble, served in brioche buns.
