Who needs maps when romance and serendipity conspire. Emily and Will share a spirit for adventure and discovery, when their paths crossed on a chance night out in Indonesia, their future fate was sealed. Global nomads, their love of wandering and exploration comes with a swag of wonderful memories. Translating these memories into a celebration reflective of their travels was of utmost importance. Deciding to gather their dearest at home in Australia rather than overseas, the magnificent Deux Belettes, a beautiful French style Chateau provided the perfect location. This little slice of heaven in the Byron Hinterland gave them their touch of Europe and with the help of talented Stylist and Wedding Coordinator Hayley Cravigan a stunning day was created; connected and laid back, warm and rustic, the essence of their beloved Tuscany under an Australian sun.

 

At the heart of all good Italian celebrations is food. Emily & Will had special memories of sunny afternoons and relaxed dining in Tuscany that they wanted to translate into a Wedding feast. A feast that would allow them to share their Italian dining experience with their family and friends. With this epic love story in mind we designed a menu of Italian classics to last the afternoon and into the evening. Starting post ceremony with a beautiful Grazing Table for guests to help themselves, then as the afternoon progressed canapes were served, followed by dinner served family style at long tables under the stars and finishing with a Dessert Station of bites sized Italian treats.

GRAZING

Abundant Italian antipasti of crispy pancetta & prosciutto, warmed spiced olives, fetta marinated in lemon thyme & pink pepper, pickled baby vegetables, steamed asparagi in salsa, baked ricotta, pesto dip and salsa rossa, parmesan & chilli polenta, fresh basil and baby tomatoes on the vine.

Served with fresh breads, grissini, biscuits & crackers

 

CANAPÉS

Porcini & wild mushroom arancini, gorgonzola dip

Baby bruschetta of cherry tomato, baby buffalo mozzarella, basil, extra virgin olive oil

Caramelised pork belly, cauliflower cream, sage burnt butter, crispy sage  

Rack of lamb; individual cutlets roasted medium rare; rosemary and redcurrant glaze

 

FEAST

Homemade rosemary and olive pull-apart loaves, hot from the oven, Extra Virgin Olive Oil with aged balsamic

Strozzapreti Napoli; Twisted pasta, ripe tomato, lemon zest, Italian parsley, garlic, pangrattato and pinenuts, extra virgin olive oil.

Salad of homemade Byron Burrata, farmers market rocket, witlof, radicchio, charred artichokes, dried tomato wafers, pistachio, zucchini flowers, ash salt.

Slow 8 hour roast shoulder of lamb thyme, garlic and lemon zest rub, red wine braise, melting baby roma truss tomatoes, crumble of dried fennel seed, walnut and rye, pan juice & balsamic reduction, pink pepper sprinkle

Steamed spring greens, tarragon, extra virgin olive oil

Local Dutch cream potatoes roasted in duck fat

Little Limoncello meringue pies

Triple Chocolate hazelnut and raspberry brownie bites 

Still waters run deep-It always takes so many people working together to create a wonderful, smooth and relaxed event. Emily and Will hand selected a great Byron team.
